Easy and Delicious Buffalo Chicken Enchiladas

Happy Thursday everyone!  If you’re looking for a quick and easy meal to prep, these delicious enchiladas are it.

Ingredients

  • 1 medium rotisserie chicken shredded
  • 8 oz. of cream cheese
  • 2 cups of shredded cheddar cheese
  • 1 cup of buffalo sauce
  • 3 tbs. melted butter
  • 2 green onion stocks chopped
  • 8 honey wheat wraps (Fiber One “70 calories” or Tumaro’s “60 calories”)
  • 9 * 13 inch deep dish
  • cooking spray
  • 2 tbs. of ranch dressing

Directions

  1. Preheat oven to 400 degrees.
  2. Spray the 9 * 13 inch deep dish with cooking spray.
  3. In a bowl combine shredded chicken, cream cheese, 1 cup of shredded cheese, white parts of the green onion, and 1/3 cup of buffalo sauce. MIX WELL until all ingredients is combined.
  4. Scoop the chicken mixture, place it evenly in the middle, and roll up 8 enchiladas placing them in the deep dish as you go.
  5. In a separate bowl combine the remainder of the buffalo sauce with the 3tbs. of melted butter, mix well, and pour over the enchiladas evenly.
  6. Sprinkle the remaining 1 cup of shredded cheese on top, and place into heated oven.
  7. Bake for 15-20 minutes.
  8. Drizzle 2tbs. of ranch on top of the baked enchiladas and sprinkle the remainder of the green onion for that finishing touch.
