Oatmeal Bread w/ Chocolate Chips

 

This delicious treat melts in your mouth. I actually had two slices with a glass of milk tehehe. I love how it isn’t too dense and heavy, with the right amount of sweetness. I hope you enjoy it just as much as we did!

Ingredients

  • 1 cup rolled oats (quick cook)
  • 1 egg
  • 1 cup milk
  • 1 tbsp. white vinegar
  • 1/2 cup of olive oil
  • 1/2 cup brown sugar
  • 1 cup of gluten free flour
  • 1 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1/2 salt
  • 1 cup mini semi- sweet chocolate chips

Directions:

  1. Spray a bread pan with non-stick cooking spray
  2. Preheat oven to 325 degrees
  3. Mix milk and white vinegar together (set aside)
  4. In a medium bowl sift together flour, baking powder, baking soda, and salt (mix well and set aside).
  5. In another medium bowl mix together oats, egg, milk + vinegar mixture, olive oil, and brown sugar.
  6. Add flour mixture to the oats mixture (mix well)
  7. Finally mix in the chocolate chips and pour mixture into bread pan.
  8. Place into preheated oven and bake for 52 minutes.
  9. Let the finished bread cool for 15 minutes before removing the parchment paper.
  10. Cut into it and ENJOY!!!
