When you’re looking for a simple and delicious meal, don’t look too far when it comes to this dish. I didn’t have any fresh thyme to sprinkle on top of the sauce covered pork chops, but it was tasty regardless 😛
Ingredients
- 2 pork chops (15 oz. each)
- salt and pepper
- 2-4 tbsp. olive oil
- broccolini bunch
- 1 baking sheet
- aluminum foil
Sauce
- 2 small shallots finely chopped
- 1 tbsp. spoon butter
- 1/2 Knorr chicken bouillon
- 4 oz. boiling water
- 4 tbsp. spoons Greek Yogurt
- 2 tsp. dijon mustard
- fresh thyme finely chopped to sprinkle
Directions:
- Preheat oven to 425 degrees
- Line baking sheet with a sheet of aluminum foil
- Wash broccolini with cold water, and trim the edges
- Place trimmed broccolini on baking sheet, season with salt and pepper, sprinkle with olive oil (set aside)
- Wash pork chops under cold water, and dry thoroughly
- Season the pork chop on both sides with salt and pepper
- Preheat pan over medium heat with 2 tbsp. of olive oil (add as needed)
- Cook 5 minutes on each side (10 minutes total)
- Remove seared pork chops from pan and place on baking sheet with the broccolini and into the oven
- Set the timer for 15 minutes (cook until pork is at 145 degrees)
- When pork is ready, remove from baking sheet and dice into thick piece on a cutting board.
(While pork is baking, prepare the sauce using the recipe below.)
Sauce Directions:
- Dissolve 1/2 Knorr chicken bouillon in 4 oz. of boiling water (mix, and set aside.
- Over high medium heat melt 1 tbsp. butter, add finally chopped shallots and sauté for about 1-2 minute (mixing the entire time to prevent from burning).
- Add bouillon mixture, and let it come to boil before reducing the heat to low/ medium (let simmer for about 2 minutes)
- Add 4 tbsp. of Greek Yogurt and 2 tsp. dijon mustard mixing the entire time.
- Reduce the heat to low and allow the mixture to thicken 3-5 minutes.
- Turn heat off and let sit.
Right: Seared pork chop (5 minutes on each side), broccolini seasoned, and sprinkled with olive oil (placed in oven for 15 minutes at 425 degrees ( Ideal pork temp: 145 degrees)
Plate each sliced piece of pork, and the broccolini. Pour the prepared sauce over the pork. Serve!
