Lovers' Knots

Week 1 Day 5 (Quarantine)

Just as much as we need the healthy goodies, sometimes it’s okay to indulge in a treat or two. It took me less than 10 minutes to prep and make this yummy treat. If you double the recipe below, you can make two batches, and freeze half for another day, and another fudgey goodness craving 🙂

Ingredients:

  • 1 cookie sheet
  • sheet of parchment paper
  • 1 cup of sugar
  • 1/4 cup of milk
  • 1/4 cup peanut butter
  • 1/4 cup of butter
  • 1.5 table spoons of cocoa
  • 1 cup of mini marshmallows (6 large marshmallows)
  • 1.5 cups of oats
  • 1/2 tsp. of vanilla

Directions:

  1. Line cookie sheet with parchment paper.
  2. In large saucepan, combine sugar, and milk (boil 1 minute on high without letting it scald by mixing the entire time with a wooden spoon.)
  3. Turn heat off but leave saucepan on the same burner and mix in peanut butter and butter first until melted.
  4. Add cocoa, marshmallows, and vanilla, continuing to stir with wooden spoon until melted.
  5. Add oats and mix well.
  6. Form scoops (I used an ice cream scooper, helped with portioning while it was hot) on a lined cookie sheet (Be sure to do it right after adding oats because it does tend to harden quickly.)
  7. Makes 12-15 “cookies” (fridge if desired)
