Week 1 Day 4 (Quarantine)
Joe and I have been in quarantine for the past 4 days now. It is definitely a strange time. I love that even though times are dark, I can spend precious moments with my family.
Joe has been working long hours from home, yet we are still together, under the same roof, and we are safe. That’s something to be thankful for. Abby and I have been taking long walks around our new neighborhood. She’s loving the exercise as much as I am, and the fresh air is great for the soul, I decided.
During these hard times however, I know that we tend to go to food for comfort. In order to help you stick to a healthy routine, I thought I’d share a simple breakfast food that only requires two ingredients.
These delicious (no syrup necessary) pancakes consist of…
- 1 ripe banana
- 2 eggs
- a pinch of cinnamon and vanilla (if desired but not necessary)
Mix these two ingredients together, and cook on medium/ low heat for some delicious gluten free pancakes.
